Summary

Gellan gum is an extracellular polysaccharide discharged by the microorganism named as phingomonas elodea. It further forms gels at low concentrations. In addition, it is offered in a substituted form as high acyl (HA)) and the unsubstituted form named as low acyl (LA)). Furthermore, its gel properties relays over the degree of substitution like LA producing hard, brittle gels and HA producing soft, elastic gels.
The outbreak of the pandemic has positively affected the global gellan gum market, owing to rise in health consciousness, especially among people after COVID-19. People are dynamically changing their preferences from conventional food to organic, plant-based, and clean label foods & beverages products. However, owing to lack of awareness regarding hazardous health effects of chemical ingredients-based food, many consumers are still consuming chemical based food products. In addition, health effects such as kidney damage, gastrointestinal symptoms, liver disease, and impairment of the nervous system are some of the major diseases caused due to consumption of chemicals and poor food ingredients. Therefore, lack of awareness is is hampering the market growth in the process.
In addition, unique processing challenges are common with protein beverages. The higher the level of protein in a beverage, the more it is difficult to stabilize it during processing and keep it stable during its shelf-life. In addition, low pH parameters and high heat treatment are needed to produce RTD (ready to drink) products, which adversely affects the texture of the end product. Moreover, the texture further impacts visual appearance of a beverage, which influences consumer acceptability and perception regarding the same. Therefore, to maximize the power of stabilized proteins and to bring smooth and stable beverage products that satisfy demands of discerning consumers gellan gum is utilized in the foods & beverages industry. In addition, when proteins are properly stabilized in solutions, shaking of the product before use is not necessary. Therefore, owing to the property of plant based stabilizing agents, the demand for gellan gum is rising in the market.
